Mutton Chops is a rich, aromatic, and traditional non-vegetarian dish made with tender mutton cooked in a flavorful coconut-based masala. Slow-cooked with fresh herbs, whole spices, and roasted gram, this dish develops a thick, spicy coating with oil beautifully separating at the end. It is perfect for weekend lunches, special occasions, or festive meals. Serve it hot with rice, rasam, or chapati for a satisfying experience.

• ½ kg mutton
• Salt (as required)
• Turmeric powder (a pinch)
• Water (as required)
• 1 cup grated coconut
• 1 inch cinnamon
• 4 cloves
• 1 tbsp fennel seeds
• 1 tbsp poppy seeds (gasagasa)
• ½ tbsp pepper
• 2½ tbsp coriander powder
• 1 medium onion
• 5 tbsp roasted Bengal gram
• ½ bunch coriander leaves
• ½ bunch mint (pudina) leaves
• 8 green chillies
• 10 garlic cloves
• 1 inch ginger
• 4–5 tbsp refined oil
• 1 tsp mustard seeds
• 1 tsp urad dal
• 1 tsp Bengal gram dal
• 2 medium bay leaves
• 1 medium onion (chopped)
• 2 tbsp garam masala powder or mutton masala powder
Step 1: Cook the Mutton
1. Wash the mutton thoroughly.
2. Add it to a pressure cooker with enough water, salt, and turmeric powder.
3. Close the lid and cook for 4 whistles.
4. Keep it aside.
Step 2: Prepare the Masala
1. Grind grated coconut, cinnamon, cloves, fennel seeds, poppy seeds, pepper, coriander powder, onion, roasted Bengal gram, coriander leaves, mint leaves, green chillies, garlic, and ginger.
2. Add little water and grind into a smooth thick paste.
Step 3: Prepare Mutton Chops
1. Heat oil in a kadai.
2. Add mustard seeds, urad dal, and Bengal gram dal. Let them splutter.
3. Add bay leaves and chopped onions.
4. Add garam masala powder and sauté well.
5. Add the cooked mutton and little salt. Sauté for 5 minutes.
6. Add the ground masala and little water. Mix well.
7. Cook for 10 minutes on high flame.
8. Then reduce to low flame and cook for 5–10 minutes until oil separates.
9. Switch off the flame.
• Clean and cook the mutton properly for best taste.
• Adjust chillies, salt, and spices according to your taste preference.
