Coconut Masala Rice is a delicious South Indian-style rice dish made with freshly ground coconut paste and aromatic whole spices. This version is mildly spiced, creamy, and full of flavor. It is perfect for lunch boxes, quick dinners, or special weekend meals, and can be prepared easily in under 25 minutes.

Serves: 3 people
1 cup fresh grated coconut
5–6 cashews
1 tablespoon fennel seeds
½ inch cinnamon
1 teaspoon black pepper
2–3 tablespoons water (to grind)
2 tablespoons oil
½ teaspoon mustard seeds
½ teaspoon urad dal
½ teaspoon chana dal
1–2 green chillies (slit)
1 sprig curry leaves
2 cups cooked rice (cooled)
Salt to taste
1 tablespoon coriander leaves (optional)
In a mixer jar, add grated coconut, cashews, fennel seeds, cinnamon, pepper, and little water.
Grind into a thick and smooth paste. Keep aside.
Heat oil in a pan.
Add mustard seeds and Add urad dal and chana dal. let them splutter.
Add green chillies and curry leaves. Sauté for a few seconds.
Add the prepared coconut masala paste, salt and sauté for 2–3 minutes on low flame until the raw smell disappears.
Add cooked rice and gently mix until the masala coats the rice evenly.
Garnish with coriander leaves and turn off the flame.
Can be packed for lunch.
Tastes best when freshly prepared.
