Vegetable Rava Upma
Introduction
Vegetable rava upma is a wholesome and comforting South Indian breakfast made with roasted rava and fresh vegetables. This version includes beans and capsicum for extra crunch, color, and nutrition. It is quick to prepare, beginner-friendly, and perfect for busy mornings or light dinners.

Ingredients
1 cup rava (Sooji Rava)
2 tablespoons oil or ghee
½ teaspoon mustard seeds
½ teaspoon urad dal
½ teaspoon chana dal
1 small onion (finely chopped)
2 green chilli (finely chopped)
1 small carrot (finely chopped)
5–6 beans (finely chopped)
¼ cup capsicum (finely chopped)
2 tablespoons green peas
1 sprig curry leaves
2½ cups water
Salt to taste
2 tablespoons chopped coriander leaves
1 teaspoon lemon juice (optional)
Method
Dry roast rava in a pan on low flame for 3–4 minutes. Keep aside.
Heat oil or ghee in a pan.
Add mustard seeds and let them splutter.
Add urad dal and chana dal. Fry until golden.
Add onion, green chilli, curry leaves and sauté for 1 minute.
Add carrot, beans, peas, and capsicum. Sauté for 3–4 minutes until slightly soft.
Add water and salt. Bring it to a boil.
Slowly add roasted rava while stirring continuously to avoid lumps.
Cover and cook on low flame for 3–4 minutes.
Turn off flame, add lemon juice and garnish with coriander leaves.
How to Serve
Serve hot with coconut chutney or pickle.
Can be packed for school or office lunch.
Tastes best fresh and warm.
