Introduction:
Red Chilli Chutney is a bold and flavourful South Indian chutney made with a blend of dried red chillies, coconut, and roasted Bengal gram. Prepared with a coarse texture and finished with a simple tempering, this chutney adds a spicy kick to everyday breakfasts and is a popular accompaniment for idli, dosa, and paddu.
Preparation Time: 10–12 minutes
Ingredients:
- 1 cup grated coconut
- 6–7 tbsp roasted Bengal gram
- 5–6 garlic cloves
- 2 Guntur red chillies
- 2–3 dried red chillies
- 3 dried Byadagi red chillies
- Salt to taste
For Seasoning:
- 1½ tbsp refined oil
- ½ tsp mustard seeds
- ½ tsp urad dal
- ½ tsp Bengal gram dal
- 7–8 curry leaves
- Optional: dried red chilli for extra spice
Method:
1. Add grated coconut, roasted Bengal gram, garlic, Guntur chillies, dried red chillies, Byadagi chillies, salt, and a little water to a mixer jar.
2. Pulse the mixture to a coarse texture. Do not grind into a smooth paste.
3. Transfer the chutney to a serving bowl.
4. Heat oil in a small tempering pan. Add mustard seeds, urad dal, and Bengal gram dal.
5. Once they splutter, add curry leaves (and dried red chilli if using).
6. Pour the hot seasoning over the chutney and mix gently.
Serving Suggestion:
Serve fresh with hot idlis, crispy dosas, and soft paddu.
Notes:
- Adjust the number of chillies according to your spice preference.
- Keep the chutney coarse for authentic taste.
